DAYTON -- Alexander's Chocolate Classics has opened on Main Street, creating and selling such artisan chocolate treats as truffles, pastries and cookies. The business is at 309 E. Main St., in the former location of Homebaked Goodness.

Alex Radcliffe and his partner, Steve Machajewski, started their company in Seattle several years ago, after Radcliffe got the idea for an edible thank-you gift for clients of his previous business -- a unique chocolate confection made from the highest quality ingredients. They named their business for Alexander the Great, who, Radcliffe says, was one of the world's great gift-givers.

Radcliffe and Machajewski studied with Belgium-based chocolatier Callebaut in its Chicago kitchen. They then began creating and selling products, mostly for corporate clients.

When it came time to expand their business and add a retail storefront, the partners knew the rent would be prohibitive in Seattle. On a trip to Walla Walla last year, they loved the wine culture, but were still unable to find commercial rent that fit their budget.

During a side trip to Dayton they discovered the reasonable rents and friendly atmosphere they were looking for. "Everyone in Dayton has been very friendly and easy to work with," Radcliffe said. Soon, he, Machajewski and his cousin, Dianne O'Dell, were on their way to Dayton to create and sell their chocolates.

All of Alexander's products are hand-made from single-origin chocolates. Radcliffe said that cacao beans (the proper pronunciation is "ka-kow") are grown in many countries throughout the world, and each provides its own unique flavors.

"We choose a chocolate flavor and pair it with another flavor, such as lemon or coffee, to provide an ideal combination," Radcliffe said. Besides truffles and pastries, Alexander's offers espresso, drinking chocolate and even treats for kids, like chocolate-covered Oreos.

The store's hours are Tuesday through Saturday, 10 a.m.-6 p.m. and Sunday, noon-5 p.m. More information can be found on the Alexander's Chocolate Classics Facebook page, or by calling 425-343-7263.

Alexander's Chocolate Classics will have its grand opening celebration July 20 which, not by coincidence, is the birthday of Alexander the Great.
